     从我学会吃饭,妈妈就说我是食肉动物,哪一顿饭也少不了肉。妈妈变着花样的做出了许多我爱吃的菜,比如糖醋排骨(虽然每个妈妈都会做,但方法不一样,做出来的味道也不一样)、滑溜肉片、走油蹄膀、红烧狮子头(肉圆子)、回锅肉、糖醋里脊等等。走油蹄膀是我最爱之一,一想起走油蹄膀那肥而不腻的皮,香而糯软的肉,就不禁会流口水。前几年在回国之前,我在电话里和妈妈说,到家就要吃走油蹄膀,果然,到家后第一顿饭妈妈就端上了我想了很久的走哟蹄膀。不能再说了,口水都流出来了


 


 


 


                


               主料猪蹄膀、菠菜、葱姜
               辅料  植物油、酱油、盐2、白糖、黄酒、味精
               ①蹄膀刮去细毛后洗净,菠菜拣清洗净。锅中放入清水,将蹄膀放入煮滚后捞出,洗净后再放入清水锅中,煮至八成酥时捞起。
               ②锅内放油,油烧至七成热时将蹄膀投入炸至5分钟左右取出,在冷水中浸至皮皱起,即司取出。剖开蹄膀,皮朝下放入碗中,


               加酱油和糖、黄酒、 葱姜结上笼蒸1小时,至酥烂。
               ③锅烧热,放油少许,下锅炒菠菜,加入盐,稍后起锅装盆,蹄膀滗去汁,扣在菠菜上面。卤倒入锅,加味精,用水淀粉勾芡


               浇在蹄膀上即可
               特点味鲜美,肥而不腻。
